SIRHA 2017

A springboard for new products and innovations.

From 21 to 25 January, the SIRHA - the leading trade fair for professionals in the hotel and food-services sectors - will be held in Lyon.
The fair brings together the crème de la crème of the food-services industry from around the world, and presents the latest products and innovations on the market. The fair is constantly seeking to improve and incorporate original, refreshing new ideas, and the addition of several new events, shows and contests will make this year’s SIRHA truly unique.

As a genuine springboard for new products and innovations, SIRHA will once again be presenting the Food Studio, an area devoted to culinary experimentation. Bridor, the “Centre Culinaire Contemporain” and Omnivore - the fair’s partners - will be presenting their prototype "concept foods" of the future, inspired by five trends identified by Loeb Innovation and SIRHA: hybrid restaurant formats, environmental concerns, closer relations with chefs, well-being and transcending borders.
The Food Studio will also host the Print Food exhibition and SIRHA Web TV. It will without doubt be the best place to experience the trends and events of the SIRHA live!

Another flagship area of the Fair is the “Sixième Sens” (Sixth Sense) restaurant area - jointly produced and organised by SIRHA and the Paul Bocuse Institute - which will present new restaurant concepts. The restaurant will showcase the latest trends in Food Services through the menus served, as well as through the tableware and room layout. The interior designer FB Décorateur will be creating restaurant settings and décors based on the trends identified by Loeb innovation. In 2015, more than 1,000 meals were served on site.

Showcasing the world of catering and food services, the “Cuisines en scènes” (Cuisine showcase) area will be presenting a new series of events, with a new setting and design. The area will host a total of 6 competitions, 2 festivals, 8 cookery workshops, with some 60 participants sharing the stage.
The “Tendances pains” area - devoted to bread and baking - will present the latest technical innovations, ingredients and trends in the sector. The programme includes a series of competitions such as the French National Baking Contest and presentations and round-tables with several experts in the field.

Naturally, one of the SIRHA’s most popular areas, the “Espace des chefs” (Chefs’ Area) will be back at this year’s fair and hosting some spectacular contests. This includes the largest pâtisserie competition in the world, the Pastry-making World Cup, which highlights new trends and reveals nations and chefs that are blazing new trails in the pastry-making sector. The competition involves 22 teams - each with a pastry chef, a chocolate-maker and ice-cream maker - from around the world. They have 10 hours to make 12 desserts served in plates. Each set of desserts must be identical. They include 3 desserts made from chocolate, 3 frozen desserts with fruit and 3 artistic items: one made from sugar, one in sculpted ice and one in chocolate.

It is in this area that the Bocuse d’Or will celebrate its thirtieth anniversary, with many surprises lined up this year. In front of 2,500 supporters and under the watchful eyes of some of the world’s top chefs, a total of 24 young chefs will take part in a flamboyant show, which rounds off eighteen months of national and continental selections around the world. To honour Lyon and Paul Bocuse, the city’s visionary chef and the creator of the competition, the theme of the 2017 Bocuse d’Or will be “Poulet de Bresse aux crustacés” (Bresse chicken with shellfish) based on an interpretation of the famous “Chicken with crayfish” recipe.

The 2017 SIRHA promises to provide some mouth-watering inspiration for all the professionals present!
